SLOW COOKER CHICKEN GYROS
Tangy, delicious chicken topped with fresh vegetables and creamy Tzatziki sauce. This recipe is so simple and makes a fresh, light dinner everyone will love! Every year, the Greek Festival comes to Salt Lake City and my husband and I love to go. We have no Greek ancestors or links to Greece of any kind, but Greeks just know how to put on quite the party and we always have such a good time! One of my favorite parts is all the delicious food . . . seriously, they have some of the most amazing grub.
I was thinking about a gyro that I had there last year and decided to try and make a chicken gyro of my own. I decided to adapt it for the slow cooker so that it would make my life even easier and it worked perfectly!
This meal was a good way to mix up our menu and my kids liked it . . . they are getting so cultured! (Ha ha- I don’t even know how Greek this dish really is . . . all I know is that it tastes good and my kids like it!)

INGREDIENTS
Gyros:
- 1 pound boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 onion, diced
- 1/4 cup water
- 1 Tablespoon olive oil
- 2 Tablespoons red wine vinegar
- 1 teaspoon oregano
- 1/4 teaspoon allspice
- 1 teaspoon lemon pepper
Tzatziki sauce:
- 1 cup fat free, plain Greek yogurt
- 2 cloves minced garlic
- 1/2 cup grated cucumber
- 2 Tablespoons chopped fresh parsley
- Salt, to taste
INSTRUCTIONS
- Spray slow cooker with nonstick cooking spray.
- Place chicken breasts inside slow cooker.
- Mix remaining ingredients together in a bowl and pour over chicken breasts.
- Cook on HIGH for 3-4 hours or LOW 6-8 hours.
- Shred chicken and serve with pocketless pita bread, sliced tomatoes, sliced onions, sliced cucumbers, lettuce, and Tzatziki sauce.
- To make the Tzatziki sauce:
- Mix all ingredients together in a bowl. Cover bowl with plastic wrap and refrigerate 1 hour. Stir before serving.
